Actually some decent public schools with enough fundings and better teachers are more academically viable and open and less religious oriented. So my suggestion is to find a good public school shall be on the top of the list. It is always a myth to me that all public schools are bad and all the private ones are good as conventional wisdom says. I have seen rather poorly run private schools with annual tuitions approaching $40k. Besides, if you are less "royal" either "spiritually" or in terms of bank accounts, you would feel more comfortable and less snobbish to be with your own kind or the "birds with the same feather." After all, good schooling is only half of the battle. Home academic supervision, parents attention, their cares and loves actually play a huge role which by all means is non replaceable!
In order to keep the proficiency of your native language in a foreign land is no easy job but that can be done. First, start it at home. You only speak your native language at home, to each other and to the kids. Your children will have maximum exposure to English anyway from school classes, teachers, school mates, play buddies, TV programs, after-school classes.... They will speak perfect English without any French accent. On the other hand, they will be able to talk in pure French if you insist that at home!! That is my 麦克麦克 experience. The bottom line is mentor can only lead you into the door step of academia, the rest is on your kids themselves....
However, Chinese way does not always work at a French family. Please take everything said with a grain of salt.
