Most time the letter from your current employer should be fine, it should cover,
1) Purpose of the trip
2) Length of the trip
3) The places/companies you will visit
4) The contact person in China
5) Finance assurance from your company to cover the expense.
If you apply two entries, sometime they will waive the letter. If they need the letter from China, the company which issues the letter better to be state owned, ie, FESCO in Beijing.
The duration of stay will depend on the type of visa,
1 entry - up to 180 days
2 entries - 90 days
Multi - 30 days.
